Chicken meatballs with mozzarella cheese filling and mashed potatoes and parsnips

Sometimes you don’t have time in the day, but you still want to eat. In such cases, Food Stories comes to the rescue. This time, chicken meatballs with mozzarella, and to make it even more interesting and delicious, we combine them with a quick potato and parsnip puree and a refreshing summer sauce.

  • 1 package Done Cookin Chicken Mozzarella Bites
  • 250 g potatoes
  • 250 g parsnips
  • 1 tbsp butter
  • a glass of milk
  • 100 ml cream
  • 1 small garlic clove
  • 2-3 spring onions
  • 4 tbsp natural yoghurt
  • 1 tbsp mayonnaise
  • a small handful of parsley
  • 1 tbsp dried oregano
  • 1 tbsp lemon juice
  • Salt and pepper

Step 1:

  • Remove the maltinuks from the package and heat in the oven according to the instructions.

Step 2:

  • While the maltinukas are heating, cook the puree. Boil the potatoes and parsnips and drain the water.

Step 3:

  • Add butter to the pot, add milk, cream, and heat everything again until boiling.

Step 4:

  • Remove the pot from the heat and mash everything well.

Step 5:

  • For the sauce, mash the garlic, spring onions, oregano, parsley, natural yogurt, lemon juice, mayonnaise, and salt and pepper in a food processor.

Step 6:

  • When serving, sprinkle the puree with melted butter and thyme, and pour the yogurt sauce into a bowl next to it. Delicious!
